Asian Sesame Cucumber Salad
Yield: 4 servings
Ingredients:
- 2 cucumbers
- 2 large carrots
- 1 tsp. salt
- 1 scallion, sliced
- 2 TBSP fresh cilantro, chopped
Dressing
- 2 TBSP rice vinegar
- 1 TBSP fresh lime juice (about half a lime)
- 2-3 TBSP honey
- 1 tsp. sesame oil
- pinch of red pepper flakes
- ½-1 TBSP toasted sesame seeds
Directions:
- Use spiralizer to cut cucumbers and carrots into long noodles.
- Salt cucumbers and let drain for 15-20 minutes.
- Whisk the dressing ingredients.
- Combine noodles, sesame seeds, scallions, and cilantro.
