Asian Sesame Cucumber Salad

Yield: 4 servings

Ingredients:

  • 2 cucumbers
  • 2 large carrots
  • 1 tsp. salt
  • 1 scallion, sliced
  • 2 TBSP fresh cilantro, chopped

Dressing

  • 2 TBSP rice vinegar
  • 1 TBSP fresh lime juice (about half a lime)
  • 2-3 TBSP honey
  • 1 tsp. sesame oil
  • pinch of red pepper flakes
  • ½-1 TBSP toasted sesame seeds

Directions:

  1. Use spiralizer to cut cucumbers and carrots into long noodles.
  2. Salt cucumbers and let drain for 15-20 minutes.
  3. Whisk the dressing ingredients.
  4. Combine noodles, sesame seeds, scallions, and cilantro.
