Asian Sesame Cucumber Salad
Yield: 4 servings
Ingredients:
2 cucumbers
2 large carrots
1 tsp. salt
1 scallion, sliced
2 TBSP fresh cilantro, chopped
Dressing
2 TBSP rice vinegar
1 TBSP fresh lime juice (about half a lime)
2-3 TBSP honey
1 tsp. sesame oil
pinch of red pepper flakes
½-1 TBSP toasted sesame seeds
Directions:
Use spiralizer to cut cucumbers and carrots into long noodles.
Salt cucumbers and let drain for 15-20 minutes.
Whisk the dressing ingredients.
Combine noodles, sesame seeds, scallions, and cilantro.
